Make Peach Cobbler for Father’s Day

IMG_6868The father’s in my life, both my dad and my husband, love peach cobbler and Pearson’s Farm, out of Ft. Valley, Georgia, was at the Alpharetta Farmer’s Market today selling ripe peaches.

Fortunately, they even had a separate box of bruised and slightly overripe peaches, 9 for $5.00 and that was fine because that’s the kind of peach you want for a cobbler.  IMG_6867

Ripe, local peaches should be coming in for about another month to local markets.  Get them while you can!

Easy Peach Cobbler

  • 1/2 c. unsalted butter
  • 1 c. all purpose flour
  • 1 c. sugar
  • 1 T. baking powder
  • pinch of salt
  • 1 c. milk
  • 4 c. fresh, ripe to overripe peaches

Melt butter in a 13 X 9 inch baking dish by placing baking dish in oven as you preheat to 375 degrees. Remove and let it cool just slightly as you prepare the following:

Combine the 1 c. flour, 1 c. sugar, 1 T baking powder and pinch salt; add milk and stir just until dry ingredients are moistened.  Pour batter into your pan.  Do not stir.

Add your sliced peaches evenly over the batter.  Do not stir.  Sprinkle cinnamon if desired.

Bake at 375 for about 40 minutes or till golden brown.  Excellent served with vanilla ice cream.
